Visen has been passionate about food from the age of 13 years. Whilst his brothers were out kicking a football, he would watch on his gran “mama” in the family kitchen, who inspired him to become a cook.

24 years

A career spanning over 24 years Visen has worked in some of the best restaurants and private households in the country, from homing his skills under Michel Roux Jnr at 2 Michelin star Le Gavroche, Antony Worral Thompson at Wiz, Notting Grill & The Angel Inn, Locanda Locatelli 1 Michelin Star, to South Melbourne where he worked for Donovan Cooke at the famous Est Est Est which shook up the dining scene in Melbourne during the late 90s.

Visen went onto become Head Chef to King Charles III and Queen Consort Camilla, a position he held for nine and half years. Visen was in the best place to expand his knowledge on sustainability and organic farming, this helped shape Visen approach in understanding the importance of seasonal cooking. He was fortunate to accompany His Majesty on overseas tours, allowing him to experience at first hand of different cultural cuisine, influencing his style of cooking.

Over the last few years Visen has opened his own gastro pub, to travelling globally and cooking for VVIP and consulting on start-up projects in the industry. He also has been committed in supporting charities in tackling mental illness with providing cooking lessons.
